audio policy config: remove LE audio from default bluetooth config

The default bluetooth module configuration files are included by targets
that do not necessarily support LE audio. Adding LE audio to the default bluetooth
config files will de facto include support for LE audio for those
devices which is not expected.

Adding specific sample files for bluetooth with LE audio support instead
to make declaration of LE audio explicit.

Test: make.
