Voice to text pin language

Voice to text is not consistent in dutch, and likely not in other languages other then english
## Description
**What is the current behavior?**
With voice to text in Dutch, it inserts words from many other languages: german, spanish, russian, french. Looking at this thread it seems more users have sub-optimal experiences: https://community.e.foundation/t/murena-voice-to-text-for-paying-workspace-users-devastating/81763
**What is the improved behavior?**
Pin the language manually so it converts speech to one single language (not switching between language with every word).
**What does it bring?**
Usability, currently the error rate is quite high for Dutch and it seems from the forum for other languages as well.
## Mock-ups
Currently the interface of voice to text already has a 'globe' button that looks like it was designed to do exactly this: choose a language. Currently when pressed it just prints 'auto' on the screen. It could be made to choose a language.
## Examples
If pinning the language actually improves the voice to text quality, it may make this feature useful to a lot more people.
## Validation
It would be best to invite a couple of different native speakers of a language to check how well it works. Ideally for the long term it would be great to have a test-battery of spoken language and transcriptions in a bunch of languages to automatically check percentage of correct words.
