In email client app, cannot include the Sent Items folder in displayed folders
Summary
Setting a folder as the official "Sent Items" folder causes it to disappear from the list of folders which can be displayed.
Steps to reproduce
Caveat -- I'm working with a fairly complicated fastmail.com account, with multiple subaccounts and aliases/identities. This may not be broadly reproducible. In particular, it is not reproducible with my default @e.email account. That said, the issue is specific to my new /e/Phone -- same account, same configuration works as expected on my old phone using K-9 email client.

Starting in the 'Folders' view of an email account (not an e.email account -- and perhaps only with a fastmail.com account), long-press the 'Sent Items' folder --> Folder settings, and there set all 'Folder xxx class' items to 1st class ...

Back in the 'Folders' view, select the top-right "..." dropdown --> Show folders... --> select "1st Class folders"

Back out to the Accounts screen, long-press the account --> Account Settings --> Folders --> Sent Folder and set it to the same folder.
What is the current behavior?
The folder set to catch/display sent emails disappears from the visible folders list. (Upon further fiddling, it looks like it gets automatically reconfigured down to a "2nd class" display folder, and/or renamed to 'Sent') ... sorry, the current behavior keeps changing for me.
Generally, though ... going back to Account Settings --> Folders --> Sent Folder, and setting it to -NONE- ... causes the missing 'Sent Items' folder to reappear. Of course, then, however, sent emails are not being added to the folder.
Addendum: All of the other "specialty" folders (Archive, Drafts, Spam, Trash) work correctly.
What is the expected correct behavior?
Folder set to be the "Sent" folder in the Account Settings --> Folders --> Sent Folder settings should be available for display in the actual Folders section, depending on the Folder display class settings assigned.

I can add screenshots if you like, but not really sure what it could add.
Possible fixes
No code-based solution, but just fiddling with it, it feels like some kind of naming issue ... like, if my "Sent Items" folder was just named "Sent", maybe it would clear up.
