Coherence between contact details on the device and on /e/cloud

Summary
The forms provided in the contacts app on the device and the one provided in the cloud space (Nextcloud) are not coherent.
Examples:
- In /e/cloud the user can chose to set a "work mobile" phone no., once synced it appears on the device as "other" phone number
- In /e/cloud I may choose the language spoken by my contact, a category that does not exist at all in the devices' contact app.
- In the device contact app I get information provided in a contact sheet if the person is reachable via messenger (Signal, Telegram, Threema,...)
The information available on contacts in the cloud version and the app version should be the same.
