Summary
I opened a topic about this on community.e.foundation: https://community.e.foundation/t/adaptive-brightness-acts-weirdly-sometimes/19665 .
Generally, I tend to have a quite low brightness to save some battery life.
Based on the replies in the topic, it seems like multiple people are experiencing this issue.
I tried to make sure that I didn't accidentally cover/trigger the sensor with my hands, but the problem still persisted.

Annoying
The problem
Steps to reproduce
Exact steps need to be confirmed. It happens to me either in 'not-so-well-lit' rooms, sometimes when I am in complete darkness watching videos.
What is the current behavior?
Every 6 seconds or so, the "Adaptive brightness" feature regulates the screen brightness, even though the lighting conditions are constant.
What is the expected correct behavior?
The screen brightness should stay at my preferred setting for a given environmental lighting.
Solutions
Workaround
Simply turn off the "Adaptive brightness" feature.
Possible fixes
I'd maybe check the sensitivity/accuracy of the sensor (how is this one called?). How granular the system saves a "preferred setting" for any given environmental lighting condition may also be relevant.
